Two streets away, the weekly Marché Bio on Place Flagey hosts a stall run by the cooperative Les Ferments du Canal that sells 500 ml bottles of ginger kombucha for €4.80; the same group runs a Saturday fermentation class at the community kitchen on Chaussée de Haecht in Schaerbeek that costs €18 and includes a starter culture to take home.
Both outlets source cabbage and root vegetables from farms in the Pajottenland, less than 30 km from the city centre, keeping transport emissions low and ensuring the produce reaches the jars within 48 hours of harvest.
Numbers behind the trend
A May 2026 survey by the Brussels Health Observatory found that 34 percent of adults aged 25 to 45 had tried at least one fermented product in the previous month, up from 19 percent two years earlier. Average weekly household spending on these items reached €7.40, according to the same report.
Nutritionists at the Saint-Pierre University Hospital note that consistent intake of live-culture foods can increase short-chain fatty acid production in the gut within two weeks, though they stress individual results vary and recommend checking with a physician before major diet changes.
